Ingredients:

7 to 8 saru (Taro),  3 medium sized tomato cut into small pieces,  2 green chillies chopped into pieces
1 tsp punch-phutana,  3tsp mustard paste,  1/2 tsp garlic paste(1 clove finely crushed Garlic)
1/4 tsp turmeric powder,  2 tsp of oil,  Salt to taste,  Some coriander leaves

Method:
Boil Taro in water properly(Like potato) and peel them ,cut into pieces.
Heat a fry pan in medium heat and then add the oil and fry the taro for 5 mins and keep aside.
Heat a frypan and put tomatos with turmeric, salt and little bit of water.
Allow them cook and then add mustard and garlic paste.Cook them for 7-8 mins.
Add taro and water(1/2cup) and cook them for another 5 mins .
Heat a fry pan in medium heat and then add the oil
Add the punch-phutana and let them  splutter
Then add  green chillies and mix it  and fry.
Add them the besar in step 6.
Add  the cut coriander leaves and serve


Badi besara

Ingredients:


15-20 Vadi,  3 medium sized tomato cut into small pieces,  2 green chillies chopped into pieces
1 tsp punch-phutana,  3tsp mustard paste,  1/2 tsp garlic paste(1 clove finely crushed Garlic)
1/4 tsp turmeric powder,  2 tsp of oil,  Salt to taste,  Some coriander leaves


Method
:

Heat a fry pan in medium heat and then add the oil and fry the vadi for 5 mins till they turn brown and keep aside.
Heat a frypan and put tomatos with turmeric, salt and little bit of water.
Allow them cook and then add mustard and garlic paste.Cook them for 7-8 mins.
Add fried vadi  and water(1/2cup) and cook them for another 3 mins .
Heat a fry pan in medium heat and then add the oil
Add the punch-phutana and let them  splutter
Then add  green chillies and mix it  and fry.
Add them the besar in step 4.
Add the cut coriander leaves and serve

Lau besara(Louki)

Ingredients:

1 small louki (lau) peeled and cut into small pieces,  1 potato cut into small pieces
2 green chillies chopped into pieces,  5-6 vadi(optional),  1 tsp punch-phutana
3tsp mustard paste,  1/2 tsp garlic paste(1 clove finely crushed Garlic)
1/4 tsp turmeric powder,  2 tsp of oil,  Salt to taste,  Some coriander leaves

Method:
Boil louki and potato in water properly
Heat a fry pan in medium heat and then add the oil and fry the vadi for 5 mins and keep aside.
add mustard and garlic paste.Cook them for 7-8 mins with turmeric, salt and little bit of water.
Allow them cook
Heat a fry pan in medium heat and then add the oil
Add the punch-phutana and let them  splutter
Then add  green chillies and mix it  and fry.
Add them the besar in step 4.
Add the cut coriander leaves and serve


Sajana Chhuin (Munga) besara (Drum stick)

Ingredients:

 

7-8  drum sticks cut into 3 inch pieces,  10-15 Vadi,  3 medium sized tomato cut into small pieces
2 green chillies chopped into pieces,  1 tsp punch-phutana,  3tsp mustard paste
1/2 tsp garlic paste(1 clove finely crushed Garlic),  1/4 tsp turmeric powder
2 tsp of oil,  Salt to taste,  Some coriander leaves

 

Method:
Heat a fry pan in medium heat and then add the oil and fry the vadi for 5 mins till they turn brown and keep aside.
Again heat a fry pan in medium heat and then add the oil and fry the drum sticks 5 mins till they turn brown and cover it till it is cooked.
Heat a fry pan and put tomatoes with turmeric, salt and little bit of water.
Allow them cook and then add mustard and garlic paste. Cook them for 7-8 mins.
Add drumsticks and water (1/2cup) and cook them for another 7-8mins and then add fried vadi  and cook them for 3 mins.
Heat a fry pan in medium heat and then add the oil
Add the punch-phutana and let them splutter
Then add green chillies and mix it and fry.
Add them the besar in step 5
Add the cut coriander leaves and serve

 


Chhatu besara (Oyster Mushrooms)

Ingredients:

250 gms of oyster mushroom canned or fresh ( fresh will be better)
1 patato washed & sliced in to small pieces,  1 Dried mango slice ( ambula ) or tamarind ( tentuli )
1 tsp punch-phutana,  3tsp mustard paste( grind 3 tsp mustard+1 red chilli+1 clove garlic )
1/4 tsp turmeric powder,  3 tsp oil,  salt to taste

 

Method:

Make slices of the mushrooms in hand & dip them in water with some turmeric powder for a while.

Then squeeze the mushroom from water & keep aside.

Heat 2 tsp oil in a pan & fry the squeezed mushroom in medium flame.

Add some salt in to it.

Again heat some oil in a pan & add punch-phutan then the sliced patatoes.
Add turmeric power & salt as required , then add the mustard paste with some water .

Cover up the pan for 10 to 15 mins then add the fried mushroom & dried mango slice.

Wait for all the water evaporates from the pan .

After that ur chattu besara is ready for lunch or dinner table.


Bhendi besara (Okra cooked with mustard)

Ingredients:

1 pkt frozen / 1 lb Fresh okra(bhendi),  2  cups yogurt (thick),  2 tbs of mustard  paste
3  tomatoes cut into peices,  1 medium onion (cut into halves and sliced lenghtwise)
1 sp  panch phutan( mustard, methi, sauf, ,jeera ,fenal),  1 sprig of curry leaves
1 sp gram flour (besan),  Salt to taste,  Turmeric,  Vegetable oil,  1 sp of garlicand ginger paste

 

Method:
First  wash, dry and fry the okra  in an open pan with some oil till they are soft and keep it aside
Then in a deep dish  put some oil   and add panch phutan and curry leaves.

When they start to splatter add onion and fry till  translucent.

Then add tomatoes and cook till they leave oil.
Mix well yogurt, besan, mustard paste & ginger garlic paste and pour it into the dish.

Let it boil, add salt and turmeric.

Then add fried okra bring to a boil and switch off heat.
Bhendi besara is prepared. Serve with rice
